Shortcut Tamale Pie
This piquant recipe combines five convenient ingredients to make a Southwestern-style beef, corn and bean "pie" with an irresistible cornbread topping...plus, you can have it on the table in just 35 minutes.

Cooking Directions
- Heat the oven to 400°F.
- Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off any fat.
- Stir the chili, water, picante sauce and corn in the skillet. Spoon the beef mixture into a 2-quart shallow baking dish.
- Mix the corn muffin mix according to the package directions. Pour the batter over the beef mixture.
- Bake for 20 minutes or until the topping is golden brown.
