Quick Loaded Potato

Change it up a bit and serve up a loaded potato instead of a sandwich with your soup.  The microwave makes it quick and easy.  We added our favorite toppings but feel free to add what you like.  It’s a great way to use up leftovers from the fridge!

Cooking Directions

  • Place the potato halves, cut-side up, on a microwavable plate.  Cover with plastic wrap.  Microwave on HIGH for 4 minutes or until tender.
  • Top the the potato halves with the sour cream, bacon, cheese and green onion.  Season to taste.

Ingredients

  • 1 medium russet potato, cut in half lengthwise
  • 1 tablespoon sour cream
  • 0.5 slice cooked bacon, crumbled
  • 1 tablespoon shredded Cheddar cheese
  • 1 tablespoon sliced green onion
