Open-Faced Apricot Chicken Salad Sandwiches

Cooking Directions
- Stir the chicken, green onion, apricots, mayonnaise and parsley in medium bowl.
- Spread the mustard on the bread slices. Divide the lettuce and the chicken mixture between the bread slices.

- 1 medium green onion, chopped (about 2 tablespoons)
- 4 dried apricots, finely chopped
- 2 tablespoons light mayonnaise
- 2 teaspoons chopped fresh parsley
- 1 teaspoon Dijon-style mustard
