Thai Chicken Fettuccine Salad
This sweet and spicy salad features cooked chicken and fettuccine coated with a kicked-up combination of picante sauce, peanut butter, honey, orange juice, soy sauce and ginger, served on mixed salad greens topped with chopped red pepper and cilantro.

Cooking Directions
- Heat the picante sauce, peanut butter, honey, orange juice, soy sauce and ginger in a 10-inch skillet over medium heat until the mixture is hot and bubbling.
- Add the fettuccine and chicken to the skillet and toss to coat. Serve the chicken mixture over the salad greens. Garnish with the red pepper and cilantro.

- 0.25 cup crunchy peanut butter
- 2 tablespoons honey
- 2 tablespoons orange juice
- 1 teaspoon soy sauce
- 0.5 teaspoon ground ginger
- 0.333 of a 1-pound package fettuccine pasta, cooked and drained (about 3 cups)
- 2 cups cubed cooked chicken
- 4 cups mixed salad greens
- 1.5 tablespoons chopped red bell pepper
- 1.5 tablespoons chopped fresh cilantro
