Mexican Avocado Toast

Take avocado toast to the next level by topping it off with protein-packed black beans and sweet, tender corn.  Chili powder and lime juice add an extra kick.  So satisfying when paired with warm comforting soup!

Cooking Directions

  • Spread the avocado on the bread slice.  Top with the beans and corn.  Season with the salt and chili powder and drizzle with the lemon juice.

  • 0.5 avocado, pitted peeled and mashed
  • 1 slice Pepperidge Farm® Whole Grain 15 Grain Bread, toasted
  • 1 tablespoon drained canned black beans
  • 1 tablespoon drained canned whole kernel corn
  • 1 pinch kosher salt
  • 1 pinch chili powder
  • 0.25 teaspoon lemon juice or lime juice
